Sindhi biryani is the fiery, tangy pride of Sindh. What sets it apart is the balance of heat and sourness — plenty of green chilli and dried plum (aloo bukhara), potatoes tucked between the layers, and a generous scatter of mint. It is arguably Pakistan's most iconic street and home biryani.
