Kabsa is the beating heart of the Saudi table and the country's national dish. Basmati is cooked in a rich, tomato-based chicken broth perfumed with dried black lime (loomi), cardamom, cinnamon and cloves, then crowned with the chicken and a shower of fried nuts and raisins. Served with a fiery tomato daqoos on the side, it is the definitive dish of Saudi hospitality.
