Mandi — of Hadhrami-Yemeni origin and now one of the most beloved dishes across Saudi Arabia — is defined by its gentle spicing and its unmistakable smokiness. Traditionally the meat is slow-cooked in an underground taboon oven; at home the magic comes from the dukhan technique, where a piece of glowing charcoal is drizzled with ghee inside the sealed pot to perfume the rice. The result is subtle, aromatic and deeply comforting.
