Kabuli pulao — the national dish of Afghanistan and hugely popular across Pakistan — is a stunning balance of savoury and sweet. Basmati is cooked over lamb and topped with candied carrot slivers, plump raisins and often nuts. The signature step is caramelising sugar to give the rice its warm amber colour and gentle sweetness.
